Garrison Brothers Distillery in Texas has released their Honeydew a honey-infused Texas bourbon initially created in small amounts in 2016 as the latest expression of the distillery’s proud portfolio of fine Texas bourbon whiskies. Make no mistake, this is not your cheap, off-the-shelf “flavored” whiskey, no this is high-quality bourbon, craft infused with Texas wildflower honey.
The Honeydew or The Honey-do?
This release has been coming for about 13 years now. It’s a huge leap from the previous offerings of Garrison Brothers, and there’s a good reason for that. Mrs. Nancy Garrison, business partner, and wife of owner Dan Garrison lobbied for a honey-sweetened bourbon whiskey from the word go in 2006 when the distillery opened. However, seeing the marketplace was flooded with poorly made “flavored whiskey” Dan was highly hesitant, patiently holding off until Garrison Brothers could do better than polluting their product with flavorings and chemicals. Through the long wait came the “Honeydew” name, a play on the ‘Honey-do’ list most married men contend with, of earnest requests from our wives.
The bourbon is 80-proof wheaten whiskey that is infused by Master Distiller Connis Todd through a patented process by Matt Albrecht of River Drive Cooperage called FIT or Fiber Infusion Technology which infuses the cubed barrel wood of the whiskey casks with the cask-strength whiskey just poured from it and Burleson’s Texas Wildflower Honey.
Garrison Brothers describe their creation on the website with great pride,

Our Master Distiller transformed used bourbon barrels into small, wooden cubes that were immersed in honey. After fully absorbing it, they were placed in the belly of a stainless-steel tank, letting the bourbon soak up those delicious honey flavors every single day for seven months.”

According to a Press Release from Garrison Brothers, “HoneyDew will be available at the distillery in Hye, Texas, for $89.99 beginning July 18. Bottles will then be distributed to select liquor stores, bars, and restaurants across the nation, available for purchase nationwide the week of August 1.”
