Ingredients
  

  • 12 oz kielbasa sausage
  • 1.5 lbs fingerling potatoes
  • 6 cups purple cabbage sliced
  • 1 sweet onion coarsely chopped
  • 2 tsp minced garlic
  • 1/2 tsp salt
  • 1/4 tsp ground pepper
  • 1 tsp dried thyme
  • 1 1/2 cup chicken broth
  • 1/2 tsp cayenne pepper to taste
  • 1 tbsp brown sugar
  • 10 oz egg noodles
  • parsley or dill as garnish

Instructions
 

  • Slice the kielbasa into 3/8 inch pieces and lightly brown in a non-stick skillet on the stovetop over medium heat.
  • Add the sausage to the slow cooker along with the potatoes and all the other ingredients except the egg noodles and parsley/dill. Stir to combine.
  • Cover and cook on low for 6 hours, do not open the lid during the cooking time.
  • Just before you are ready to serve cook the egg noodles as per the package directions.
  • Stir the potatoes, cabbage, and kielbasa, divide the noodles between the bowls, spoon the potato mixture over top. Garnish with parsley or dill. Serve.
