Slow Cooker Sausage and Potatoes
Ingredients
- 12 oz kielbasa sausage
- 1.5 lbs fingerling potatoes
- 6 cups purple cabbage sliced
- 1 sweet onion coarsely chopped
- 2 tsp minced garlic
- 1/2 tsp salt
- 1/4 tsp ground pepper
- 1 tsp dried thyme
- 1 1/2 cup chicken broth
- 1/2 tsp cayenne pepper to taste
- 1 tbsp brown sugar
- 10 oz egg noodles
- parsley or dill as garnish
Instructions
- Slice the kielbasa into 3/8 inch pieces and lightly brown in a non-stick skillet on the stovetop over medium heat.
- Add the sausage to the slow cooker along with the potatoes and all the other ingredients except the egg noodles and parsley/dill. Stir to combine.
- Cover and cook on low for 6 hours, do not open the lid during the cooking time.
- Just before you are ready to serve cook the egg noodles as per the package directions.
- Stir the potatoes, cabbage, and kielbasa, divide the noodles between the bowls, spoon the potato mixture over top. Garnish with parsley or dill. Serve.
