Bourbon Grapefruit Punch

Mint Simple Syrup
- 2/3 cup water
- 2/3 cup sugar
- 10 fresh mint sprigs plus extra for garnish
Punch
- 8 cups pink grapefruit juice
- 5 cups bourbon
- 20 dashes angostura bitters
- 2 cups club soda
Ice Ring
Pour a layer of water into the tube pan and freeze
Slice the grapefruit into 1/4" rings before cutting the rings into wedges
Place some of the wedges onto the frozen layer of water. Pour enough water in to cover and freeze again. Repeat layering with more of the grapefruit and water until the pan is full. Keep frozen till ready to use
Punch
Strain the syrup into a punch bowl. Add the juice, bourbon, bitters and club soda, and stir to combine. Place the ice ring in the center and add a few mint sprigs for garnish
