Chipotle Lime Shrimp Kabobs

This delicious grilled shrimp kabob recipe is great as an appetizer for social gatherings...and might be your new favorite upcoming summer dish

Ingredients
  

  • 1-1 1/4 lbs extra-large peeled deveined shrimp
  • 1/4 cup extra virgin olive oil
  • 1/4 cup fresh squeezed lime juice
  • 1 tbsp lime zest
  • 1 tsp chipotle chili pepper
  • 1/2 tsp smoked paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tbsp honey
  • salt and pepper

Instructions
 

  • Whisk together all marinade ingredients in a container with a lid or cover
  • Pour half of the marinade mixture into a large bowl, leaving the other half in the jar to serve
  • Toss the shrimp in the basin to coat and marinate for 15-30 minutes
  • Thread 5-6 shrimp each skewer onto skewers
  • Preheat the grill to medium-high. Turn the heat down to medium. Grease the grill grate lightly
  • Place shrimp on grill to cook 3-4 minutes on each side
  • Place the grilled shrimp on a serving place and drizzle with the remaining marinade

Notes

Metal or wooden skewers can be used
