tbsp
olive oil

lemons
juiced and 1 zested
2-3
garlic clove
minced

tbsp
fresh oregano
minced, or 1 tsp dried oregano

honey
salt and pepper

large, skinless and boneless, cut into 2-inch pieces
lemon wedges
to serve

soaked bamboo skewers
Instructions
To a large bowl, add all the ingredients, besides the chicken and mix well.
Next, add the chopped chicken and toss to get all pieces coated. Cover and marinate into the fridge for up to one hour.
Thread the marinated chicken pieces onto the prepared skewers.
Heat a grill pan or an outdoor grill over medium-high heat. Grill for 6-8 minutes in total, or until the chicken is fully cooked through.
To the same preheated grill, add the lemon wedges. Grill for 1-3 minutes, or until grill marks appear.
Serve the chicken skewers with grilled lemon wedges and enjoy.
Notes
Be careful not to leave this chicken in the marinade too long or the texture of the chicken will off.
