BBQ Garlic Butter Prawns

Marinade
- 24 pieces tiger prawns
- 1 tbsp olive oil
- 1/2 tsp salt
- 1/4 tsp ground black pepper
Garlic Butter Sauce
- 1.5 oz butter
- 1 red chili finely chopped
- 3 garlic cloves finely chopped
- 1 lemon
- 1 tbsp parsley finely chopped
- 1/4 tsp salt
Preparation of the prawns
If using bamboo skewers, soak in water to prevent them from burning for at least half an hour before starting to grill
Peel the prawn, leaving the tail intact, and then devein them
Place it on a flat surface. Run a very sharp small knife carefully across the prawn so that the body is divided into two attached halves
Combine olive oil, salt, and pepper, and mix well in a bowl. Add the prawns and let marinate
Garlic Butter Sauce
Place a medium-size pan on low heat and add the butter to melt
Add chopped garlic, chilies, chopped parsley, and salt to allow them to infuse
Grilling
Preheat the grill to medium-high heat, thread the prawns onto the skewers
Place the skewers on the hot grill and cook each side for a minute
Remove the prawns from the skewers and toss them into garlicky butter and cook for another minute, or until opaque and white/pink
Sprinkle with lemon juice and serve immediately
