Chicken Broccoli Soup
We're back with another delicious soup for the winter season! This recipe is easy to make yet very flavorful.

- 2 tbsp unsalted butter
- 1 tbsp olive oil
- 1 large onion finely chopped
- 2 carrots julienned
- 1/2 tsp salt
- 1 tsp black pepper
- 3 tbsp flour
- 3 cup low sodium chicken broth
- 4 cup broccoli florets cut into 1/2 inch pieces
- 2 1/2 cup half and half
- 8 oz extra sharp cheddar cheese shredded
- 4 oz American cheese diced into cubes
- 2 cup poached or rotisserie chicken diced or shredded
- cheddar cheese garnish
Combine butter and olive oil in soup pot and cook until butter is melted. Add the diced onion, carrots, salt and pepper to cook for 5 minutes or until onions begin to soften
Add the flour and stir to coat the vegetables. Continue cooking and stirring until the flour starts to form a fond on the bottom of the pan
Add the chicken broth and scrape the bottom of the pan to release any browned bits. Pour in the broccoli and bring to a simmer. Reduce the heat to medium-low, cover and simmer for 10 minutes
Stir in the half and half, cheddar and American cheeses to cook until the cheese has melted. Add the chicken, cover and simmer for another 5 to 10 minutes
Garnish the serving bowl with shredded cheddar and black pepper
