Chicken Broccoli Soup

We're back with another delicious soup for the winter season! This recipe is easy to make yet very flavorful.

Ingredients
  

  • 2 tbsp unsalted butter
  • 1 tbsp olive oil
  • 1 large onion finely chopped
  • 2 carrots julienned
  • 1/2 tsp salt
  • 1 tsp black pepper
  • 3 tbsp flour
  • 3 cup low sodium chicken broth
  • 4 cup broccoli florets cut into 1/2 inch pieces
  • 2 1/2 cup half and half
  • 8 oz extra sharp cheddar cheese shredded
  • 4 oz American cheese diced into cubes
  • 2 cup poached or rotisserie chicken diced or shredded
  • cheddar cheese garnish

Instructions
 

  • Combine butter and olive oil in soup pot and cook until butter is melted. Add the diced onion, carrots, salt and pepper to cook for 5 minutes or until onions begin to soften
  • Add the flour and stir to coat the vegetables. Continue cooking and stirring until the flour starts to form a fond on the bottom of the pan
  • Add the chicken broth and scrape the bottom of the pan to release any browned bits. Pour in the broccoli and bring to a simmer. Reduce the heat to medium-low, cover and simmer for 10 minutes
  • Stir in the half and half, cheddar and American cheeses to cook until the cheese has melted. Add the chicken, cover and simmer for another 5 to 10 minutes
  • Garnish the serving bowl with shredded cheddar and black pepper
