Chicken Broccoli Soup
Ingredients
- 2 tbsp unsalted butter
- 1 tbsp olive oil
- 1 large onion finely chopped
- 2 carrots julienned
- 1/2 tsp salt
- 1 tsp black pepper
- 3 tbsp flour
- 3 cup low sodium chicken broth
- 4 cup broccoli florets cut into 1/2 inch pieces
- 2 1/2 cup half and half
- 8 oz extra sharp cheddar cheese shredded
- 4 oz American cheese diced into cubes
- 2 cup poached or rotisserie chicken diced or shredded
- cheddar cheese garnish
Instructions
- Combine butter and olive oil in soup pot and cook until butter is melted. Add the diced onion, carrots, salt and pepper to cook for 5 minutes or until onions begin to soften
- Add the flour and stir to coat the vegetables. Continue cooking and stirring until the flour starts to form a fond on the bottom of the pan
- Add the chicken broth and scrape the bottom of the pan to release any browned bits. Pour in the broccoli and bring to a simmer. Reduce the heat to medium-low, cover and simmer for 10 minutes
- Stir in the half and half, cheddar and American cheeses to cook until the cheese has melted. Add the chicken, cover and simmer for another 5 to 10 minutes
- Garnish the serving bowl with shredded cheddar and black pepper
