Colcannon Potatoes
Otherwise known as Irish mashed potatoes, this recipe is perfect as a side dish for the St. Patrick's Day holiday

- 2 lbs Yukon gold or yellow potatoes peeled & cut into medium chunks
- 4 cup green cabbage cut into small strips
- 1/2 cup leeks trimmed (no dark green top or bottom root) & diced
- 1/2 cup scallions trimmed (no dark green top or bottom root) & diced
- 6 tbsp butter softened & cut into 3 pieces
- 1/4 cup half and half
- salt and pepper to taste
In a large pot, boil water for potatoes. Boil potatoes for 15-20 minutes until they are very tender and start to fall apart.
Meanwhile, in a separate large pot over medium heat, add 1 piece of butter and the cabbage. Sauté until wilted yet still al dente, about 4-5 minutes. Add leeks and scallions, and sauté for an additional 1-2 minutes. Keep heat on very low until potatoes are done.
Add drained potatoes to cabbage mixture and mash with a potato masher. Add another piece of butter and the half and half that’s been warmed in the microwave for 25 seconds and stir.
Use the potato masher to work through any leftover lumps, until mashed potatoes are almost smooth. Add salt and pepper to taste, stirring again.
Serve immediately.
