Salmon
- 4 salmon fillets
- salt and pepper to taste
- 1 tbsp olive oil
Mango Salsa
- 1 cup mango cubed
- 1/2 cup red pepper chopped
- 1/4 cup red onion chopped
- 2 sprigs of cilantro
- 2 tbsp lime juice
- 3 tbsp olive oil
- salt and pepper to taste
Preheat oven or air fryer to 425 degrees F. Can also grill, if preferred
Chop up the mango, red onion, and pepper. Combine
Add oil, lime juice and cilantro and mix well
Season salmon with olive oil, salt and pepper. Cook for 8 to 10 minutes or until done
Plate the salmon and spoon the salsa over the salmon
