Salmon with Mango Salsa

Pairing grilled salmon with fresh mango salsa makes for a great summertime meal

Ingredients
  

Salmon

  • 4 salmon fillets
  • salt and pepper to taste
  • 1 tbsp olive oil

Mango Salsa

  • 1 cup mango cubed
  • 1/2 cup red pepper chopped
  • 1/4 cup red onion chopped
  • 2 sprigs of cilantro
  • 2 tbsp lime juice
  • 3 tbsp olive oil
  • salt and pepper to taste

Instructions
 

  • Preheat oven or air fryer to 425 degrees F. Can also grill, if preferred
  • Chop up the mango, red onion, and pepper. Combine
  • Add oil, lime juice and cilantro and mix well
  • Season salmon with olive oil, salt and pepper. Cook for 8 to 10 minutes or until done
  • Plate the salmon and spoon the salsa over the salmon
