Salmon with Mango Salsa
Ingredients
Salmon
- 4 salmon fillets
- salt and pepper to taste
- 1 tbsp olive oil
Mango Salsa
- 1 cup mango cubed
- 1/2 cup red pepper chopped
- 1/4 cup red onion chopped
- 2 sprigs of cilantro
- 2 tbsp lime juice
- 3 tbsp olive oil
- salt and pepper to taste
Instructions
- Preheat oven or air fryer to 425 degrees F. Can also grill, if preferred
- Chop up the mango, red onion, and pepper. Combine
- Add oil, lime juice and cilantro and mix well
- Season salmon with olive oil, salt and pepper. Cook for 8 to 10 minutes or until done
- Plate the salmon and spoon the salsa over the salmon
