Strawberry Pie
A wonderful dessert option that includes fresh strawberries, perfect for the summertime.

- 1 frozen deep-dish pie crust
- 2 lbs strawberries cut up and divided
- 1/2 cup plus 2 tbsp water divided
- 1 cup sugar
- 2 tbsp lemon juice
- 3 tbsp cornstarch
- whipped cream to garnish
Cook frozen pie crust according to package instructions.
In a blender, combine ½ pound strawberries and ½ cup water. Blend until smooth.
Pour strawberry puree into a saucepan. Add sugar and lemon juice and stir.
Mix together cornstarch and 2 tablespoons water in a bowl. Slowly add to the saucepan with the strawberry puree.
Heat strawberry puree over medium and let simmer for 5 to 8 minutes, or until mixture has thickened and reduced. Remove from heat and let cool for 5 to 10 minutes.
Add the remaining 1 ½ pounds strawberries to a separate bowl. Pour the cooled strawberry mixture over the top and use a spatula to coat all the berries.
Pour filling into the cooked crust and chill pie in the refrigerator for 3 to 4 hours.
Garnish pie with whipped cream just before serving.
