A wonderful dessert option that includes fresh strawberries, perfect for the summertime.

Ingredients
  

  • 1 frozen deep-dish pie crust
  • 2 lbs strawberries cut up and divided
  • 1/2 cup plus 2 tbsp water divided
  • 1 cup sugar
  • 2 tbsp lemon juice
  • 3 tbsp cornstarch
  • whipped cream to garnish

Instructions
 

  • Cook frozen pie crust according to package instructions.
  • In a blender, combine ½ pound strawberries and ½ cup water. Blend until smooth.
  • Pour strawberry puree into a saucepan. Add sugar and lemon juice and stir.
  • Mix together cornstarch and 2 tablespoons water in a bowl. Slowly add to the saucepan with the strawberry puree.
  • Heat strawberry puree over medium and let simmer for 5 to 8 minutes, or until mixture has thickened and reduced. Remove from heat and let cool for 5 to 10 minutes.
  • Add the remaining 1 ½ pounds strawberries to a separate bowl. Pour the cooled strawberry mixture over the top and use a spatula to coat all the berries.
  • Pour filling into the cooked crust and chill pie in the refrigerator for 3 to 4 hours.
  • Garnish pie with whipped cream just before serving.
