Caprese Tomato Salad

This salad is perfect for the summer as it uses sun-ripened tomatoes as the star of the recipe

Ingredients
  

  • 8 cup multicolored cherry tomatoes cut in half
  • 4 cup marinated mozzarella balls
  • 12 basil leaves cut up
  • 1/2 cup olive oil
  • 1/3 cup balsamic vinegar
  • 1 tsp salt
  • 2 garlic cloves minced

Instructions
 

  • Place the tomatoes, mozzarella balls and basil in a large bowl
  • In a small bowl, whisk together the olive oil, balsamic vinegar, salt and garlic
  • Pour the dressing over the tomato mixture and gently toss to coat evenly
