Cinnamon Apple Pancakes

Ingredients
  

  • 1 egg
  • 1/2 cup milk
  • 2 tbsp vegetable oil
  • 2 tbsp sugar
  • 1 tsp vanilla extract
  • 1 cup flour
  • 1 1/2 tsp cinnamon
  • 2 tsp baking powder
  • 1/2 apple shredded
  • maple syrup topping
  • ground cinnamon topping
  • chopped apples topping

Instructions
 

  • Whisk together the egg, milk, oil, sugar and vanilla in a bowl to combine
  • Add the flour, cinnamon and baking powder. Whisk the dry ingredients until they are blended with the wet ingredients, being careful to not overmix the batter
  • Add the shredded apples to the batter and gently mix
  • Heat your griddle to 325 degrees. Pour about ¼ cup batter for each pancake
  • Cook about 3 minutes on one side until bubbles form, then flip and cook another 3 minutes
  • Remove from heat. Serve with maple syrup, ground cinnamon and chopped apples
