
Chipotle Lime Shrimp Kabobs
Ingredients
- 1-1 1/4 lbs extra-large peeled deveined shrimp
- 1/4 cup extra virgin olive oil
- 1/4 cup fresh squeezed lime juice
- 1 tbsp lime zest
- 1 tsp chipotle chili pepper
- 1/2 tsp smoked paprika
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tbsp honey
- salt and pepper
Instructions
- Whisk together all marinade ingredients in a container with a lid or cover
- Pour half of the marinade mixture into a large bowl, leaving the other half in the jar to serve
- Toss the shrimp in the basin to coat and marinate for 15-30 minutes
- Thread 5-6 shrimp each skewer onto skewers
- Preheat the grill to medium-high. Turn the heat down to medium. Grease the grill grate lightly
- Place shrimp on grill to cook 3-4 minutes on each side
- Place the grilled shrimp on a serving place and drizzle with the remaining marinade
